Apple and cranberry muffins

Looking through the archive of what I have posted I cannot help but wonder how is that possible that I only have 2 muffin recipies? Considering it is one of the things I bake very often and have fed a considarate amount of them to my colleagues, it is a huge negligence on my part. The good news though is that Spring is on its way and with it the picknick season. So consider this post a hint of what you can pack in your picknick basket. That is if picknicks and such are still allowed.

Rice with roasted vegetables

My “no meat and no sugar” – challenge is over by now and I’m happy I did it. It definitely was fun. And a little bit of an achievement. Though I had to get over sugar, there is enough substitute for meat. The curious foodie in me even reached for meatless meatballs, where the list of ingredients of what it’s made of left me even more curious and confused as before, since none of it sounded like anything I know.
