Stir fried beef with cashew nuts

Since the middle of October, all I stumble upon is the reminder that Christmas is coming. The christmas markets will open today, and on some cooking blogs one can already feel the holiday spirit. Well, I’m not done with Autumn yet! Even though I did hum Rudolf the Rednosed Reindeer last week. But hey, I do that in Summer too, so it doesn’t count.

So instead on focusing on Christmas, I’m trying out some quick recipe, because those always come in handy. Especially when you go to work and it’s dark outside, and when you come back it’s also dark. Sure it’s cosy, but on the other hand you can easily get the feeling you have nothing of the day.

And let’s face it- everyone needs tried recipe for when you don’t want to spend hours making dinner, and still watch at least one episode of game of thrones before going to bed. This one is tried and very approved! And if you like things spicy, it’ll be your favourite too.

Serves 2-4

peparation time: 5minutes                                   cook time: 15min

2 tbsp vegetale oil

2 sirloin steaks, about 200gr (7 oz) each

2 garlic cloves

2,5cm fresh ginger

50g (1,8oz) unsalted cashew nuts

3 tbsp sweet chilli sauce

1 tbsp tomato ketchup

3 tbsp soy sauce

small broccoli

pinch of chilli flakes

200gr (1 cup) rice

Mix the sweet chilli sauce, soy sauce and the ketchup in a bowl. Prepare the meat by cutting out the excessive fat, wash it and pat dry.

Heat the oil in a wok or large frying pan over a high heat. Add the meat and stir fry for about 3 minutes. Take the beef out and set aside.

Add the garlic, ginger and the cashews and stir fry for just a minute. Pour the chilli sauce mixture, add chilli flakes and 100ml of water and let it simmer for 2 minutes. Add the broccoli and stir fry for additional 2 minutes. Return the beef to the wok to heat through.

Serve with rice.
