Valentine’s day is only few days away. Not that you would miss it, with the deluge of heart-themed decorations far and wide. However opposed you may be to this overly commercialised holiday, you can bet on your loved one appreciating a romantic gesture. If you haven’t planned anything yet, how about surprising your other half to a breakfast in bed? Valentines Day falls conveniently on a Sunday this year. But if the breakfast is not an option, how about a delicious, romantic dinner? Well,what else could a food blogger suggest? Nonetheless, if you do plan on cooking, I suggest this chicken with walnuts and pomegranate. It is very good and very easy to pepare.
Preparation time: 10min cook time: 40min
Serves 2:
3 chicken legs
1tbsp tomato paste
2 big onions
80g of walnuts
1 pomegranate
300ml chicken broth or vegetable stock
fresh parsley
Clean the chicken legs, salt it and fry in a pan for ca 10 min from each side with a little bit of oil. In the meantime peel the onions and cut in larger cubes, mince the walnuts in food processor and prepare the chicken broth. Cut the pomegranate in half, scoop ca 2 tbsp of seeds and squeese the juice to a cup.
When the chicken is ready, move from the pan. Put the onions in and fry it until glassy. Add the ground walnuts for just a minute and fry with the onions. Add the tomato paste and the juice of the pomegranate. Mix well, then pour in the broth and add the chicken. Cook for another 20 min. When the time is up, garnish with the pomegranate seeds and fresh parsley. Serve with rice or potatoes.
