When I started sorting out my recipes by category, only then I noticed I didn’t post any side dishes so far. Well, sure, sometimes a cooked broccoli or roasted vegetables are enough. I would however like to share also other ideas. Starting with this beetroot salad, which something my family prepares very often.
I don’t know about you, but beetroot is one of those vegetables I could eat everyday. I remember when I was younger and whenever my mum would ask me to prepare the beetroots for dinner I would eat half of the thing I had at hand. So needless to say she stopped asking me whenever there was a beetroot on the menue. So when a friend told me that he hated it I almost blurrted out “what is wrong with you?”. Then I thought better of it, as it is roughly the same reaction I get when I tell people that I don’t like strawberries. I inquired him about his distate for the vegetable, as I thought he only probably never had it cooked the right way. But he said that it tasted like dirt.
In my head I was shaking him by the shoulders and sceaming ino his face that it did not and to take it back. But I composed myself and gave him the reicipe to try out. I don’t know if he ever did, as beetroots never became a topic again, but trust me, it is worth giving it a try.
My parents would serve it very often as a side dish to a fish or meat balls.
I like to serve it especially with spicier dishes, as it nicely takes the edge off. It is fresh and fruity and even a little bit sweet. And since one can buy beetroots precooked and vacuumed packed, it is definitely effortless and quicker to prepare.
Preparation time: less than 10 min if using precooked beetroot, otherwise +30-40min for cooking
About 3-4 medium sized beetroots or one pack of them vacuum packed.
2 tablespoons of vinegar
1 teaspoon on sugar
1 teaspoon of salt
a little bit of lemon juice
If you have fresh beetroots, cook them whole until soft. Let them cool and peel. If you are using precooked beetroots omit the above part.
Prepare a bowl and grate the vegetable on the grater with the big holes there. Peel the apple and grate it as well. Mix it until they are more or less spread evenly. Add the vinegar, sugar and salt. Mix it again and taste. Drizzle with lemon juice and serve.
