So the christmas spirit got also to me. Boxes with christmas decoration are already brought from the basement, I saw first christmas movie this year and the appartment also slowly looks more festive. Admittedly we stil hunt for the perfect tree, but that also should be solved soon. But what would it be for christmas spirit without the sweet smell of self made ginger cookies? The ones I want to present you today are perfectly buttery in taste and crisp. Didn’t get to enjoy them too much last year, as they were disappearing so fast! So this christmas I will most probably bake it twice.
220g flour
100g butter
1 large egg
6 tbsp sugar
2 tbsp cocoa
1 tbsp honey
1 tbsp milk
1 tsp cinnamon
1tsp cardamom
a pinch of nutmeg
In a bowl mix the butter and sugar to a fluffy mass. Add the egg, milk and honey and mix thoroughly. Sift the flour and gradually add to the mass, along with cocoa and spices, and mix thoroughly. Knead the dough until it forms soft and solid mass. Wrap in a tin foil and leave in the fridge to get cool down.
Preheat the oven to 180º. Roll the dough on a lightly floured pastry board (to a thickness of 5 mm) and cut using cookie cutters. Line the ready cookies on a baking sheet and bake for 10-12 minutes. Place the baked cookies on a wire rack and decorate with icing.
