Christmas muffins

When do you start getting into the Christmas mood? Is there anything special that makes you feel like Christmas? My last post was about two weeks ago, and despite the fact that it’s only two weeks until Christmas I feel the holiday spirit only just a little. It might be because we just redecorated our appartment, and it still feels a little bit.. different.

I tried singing jingles in the shower, but you know, when too much shampoo gets into your mouth it just becomes a soap opera.

I actually wanted to show you something else today, but thought by baking something christmassy I’ll get a little bit more into the festive mood. But christmas baking is not reduced only to cookies. It makes more fun to meet up on Advent Sundays over a cup of coffee and a cake. Or like in this case, a muffin. So here is something I came across lately, Christmas muffins! Maybe they don’t smell like Christmas, but they taste amazing! And well, you just can’t get enough of them.dsc_19451ws

Makes about 18 muffins. Preparation time: 20min  Baking time: 20min

100g (3,5oz) butter

180g (6cup) cornflakes

2 apples

300ml (1¼ cups) milk

2 eggs

200g (1  2/3cups) flour

60g (1/3 cup) sugar

2tsp baking powder

50g (½ cup) chopped walnuts

50g  (½ cup) chpped haselnuts

50g  (½ cup) dried cranberries

pinch of nutmeg

pinch of salt

Melt the butter in a small pot. Put the cornflakes in a freezing bag, seal it tight, and crush with a rolling pin. Peel the apples and grate them on a grater with big holes.

Put the cornflakes and the apples in a bowl. Add the milk, melted butter and the eggs and stir. In another bowl mix the flour, sugar and the rest of the dry ingredients together. Add the apple mix to the dried ingredients and mix well together. Let the dough rest for 10min.

In the meantime preheat the oven to 175ºC (345F) and prepare the muffin forms. When the dough is ready, fill the forms to about ¾ and bake for 20min.
